Arugula Prosciutto Pizza

Oh.my.word. If you are in a pinch for time and need something delicious to whip up for yourself or company, then I've got your pizza. It's the perfect combination of chewy, creamy, sweet, salty and a little healthy greens. 

 

I call it the cheaters version because I used Naan as the crust. I can't take credit for that twist so a shout out is due to my buddy, Laura, on the good tip!  This recipe was used for a single pizza and feel free to adjust according to your liking. 

 

So let's discuss the details...

 

 

 

 

 

Ingredients

 

Naan 

olive oil (2 Tbsp)

minced garlic (1 Tsp)

dash salt and pepper

1/2 cup low fat ricotta cheese

1/4 cup shredded mozzerella cheese

3 cups arugula 

1/2 green onion 

squeeze of lemon

1 ounce thinly sliced priscutto 

shaved parmesan to taste

 

Directions

Turn your oven on broil. 

 

Place Naan on baking sheet. Mix 1 tablespoon of olive oil, minced garlic and S&P. Brush thoroughly on Naan. 

 

Layer ricotta and mozzerella cheeses on Naan then place in oven. 

 

Quickly whip up the dressing for the arugual salad with the remaining 1 tablespoon of olive, lemon, green onion and dash of S&P. Toss argula in dressing and set aside. 

 

Remove pizza from the oven once the cheese is bubbly and then layer the arugula, priscutto and shaved parmesan. 

 

And that's it. Enjoy!
