There's nothing like a fresh peach. If you've ever been lucky enough to buy some while you've been in the South in season, whether it's been at a fruit stand off the side of the road or a farm, you know that fresh peaches are simply amazing. They are so incredibly sweet and juicy that you almost need an extra shirt to change into once you're done eating.
Luckily, there's a group of fine folks that bring the experience to many of us on the East Coast. It's rightfully called, The Peach Truck, and starting in June they begin the Freestone Peach Tour. It wasn't until recently I found out about them and immediately searched high and low to see when they'd be travelling back through town. I'm not even kidding.. I marked my calendar and starting thinking of every recipe I loved that involved peaches which comes to the Peach Cobbler I'm sharing with you.
A lady near and dear to my heart made this for us one weekend and I promise it's worth jotting down the recipe. Maybe even twice so you can share with a loved one.
If you've been following along you should know by now that I love a good recipe and especially one that has some conveniences. I don't have as much time in the kitchen baking as I'd like, so you're not going to see flour, corn starch or baking soda in this recipe. I promise if you don't tell your company that you didn't make this from scratch, they won't be able to tell otherwise.
