Crostini- sounds fancy, right? It's simply a baguette slice that is brushed with a little olive oil, s&p and toasted. That's it. Add a little pimento cheese (recipe here) then some bacon and you've got a little appetizer that is sure to please.
I found this recipe idea reading Food and Wine and just had to try it but put my own little spin on it. Let's talk details. The amount of time it takes you to whip these babies up is remarkable. Once you have all of the ingredients, we are talking 10 minutes or so.
Ingredients you will need...
- Baguette slices
- Pimento Cheese (1 teaspoon per baguette)
- Bacon crumbles
- Pepper Jelly
Speaking of pepper jelly, I found this amazing Peach Jalapeno Jelly at a local Kroger. It is made by Lucky Clover Farm in Madison County and is so yummy! I could literally eat this stuff out of the jar. And let's be honest, I may have... (sorry mom & gran!)
The jelly is sweet with a little bit of heat and complements the crostini really well.
Let's keep going...
-Set the oven to 350°F
-Lightly brush each baguette with olive oil
-Layer the pimento cheese and then sprinkle bacon pieces on each baguette. (I aim to sprinkle enough bacon on the crostini to ensure it's in every bite)
-Bake on a cookie sheet at 350°F for approximately 5-7 minutes or until cheese is bubbly
-Remove from oven and serve warm with a side of Peach Jalapeno Jelly
The flavors of this little appetizer covers it all. Chewy, salty, sweet, tangy and a little heat from the jalapeno. Sweet perfection!
