Pimento Cheese is a Southern staple. It doesn’t quite get the credit it deserves in areas other than the south quite simply because they don't know what they are missing.
It is so transitional. Slap some between two pieces of white bread and there’s the main course, place it on a cracker or vegetable and you’ve got a snack or simply eat it out of the container and hope nobody’s watching.
Like most Southerners, I grew up with Pimento Cheese and it wasn’t until I met people from other regions that I realized its southern flare. (same goes with hot dog sauce, but that deserves a post by itself!) This savory spread is affectionately identified as the “Caviar of the South” and I’m good with that. In fact, Pimento Cheese Sandwiches are a signature item at the Masters Tournament in Augusta. So…it’s official.
There are so many versions of Pimento Cheese recipes out there but I thought I’d share mine with you. It’s super easy and tasty. That’s what we want, right?!
So the next time you have friends or family over, be sure to whip up this recipe and act like you’ve been in the kitchen all day. Then sit back and listen to them rave over it with each bite.
5 cups grated white cheddar
3/4 cup mayo (I’m quite partial to Hellman’s. The real stuff. None of that olive oil or light version)
12 oz. pimentos, drained
1/2 cup sliced green onions
1 tablespoon dry mustard
2 tablespoons Worcestershire
1 ½ teaspoons hot sauce
¾ teaspoon celery seeds
¾ teaspoon apple cider vinegar
Salt & pepper to taste
Finely grate the cheddar cheese, then set aside
Combine all remaining ingredients in a bowl and mix well.
Slowly add in the cheddar cheese and stir until well blended.
Cover and chill overnight.
It’s best to make the night before you are serving. This will allow all flavors to fully blend together.
Oh, it’s amazing... and so easy to make. Just don’t eat it all in one sitting. That could be really bad and I definitely do not recommend.
